Malus domestica 'Liberty'

​​About the Variety: Liberty was developed by Cornell University in 1978 and released through the PRI disease-resistant breeding program. Bred specifically to be "free from disease," its parentage includes Macoun, Golden Delicious, and disease-resistant crabapple genetics. Liberty has become one of the most widely planted disease-resistant apples in the eastern United States and is a favorite among organic growers and cider makers.

Fruit Description: Medium to large apples with deep red color and occasional striping over a yellow-green background. Flesh is white to cream-colored, fine-grained, very crisp, and juicy. Flavor is well-balanced sweet-tart with hints of wine or berries - often compared to McIntosh but with better texture and storage. The eating quality is excellent both fresh and after short storage.

Harvest Window for Cincinnati/Southern Ohio: Late September to Early October (typically September 25 - October 10)

Ripeness Indicators:

  • Deep red color fully develops, background yellows

  • Fruit separates easily with gentle upward lift

  • Seeds turn brown

  • Flesh loses bright green tinge, becomes cream-colored

  • Aroma becomes pronounced

  • Begin dropping from tree if overripe

Disease Resistance:

  • Highly resistant to apple scab

  • Highly resistant to cedar apple rust

  • Resistant to fire blight

  • Some resistance to powdery mildew

Liberty's disease package makes it exceptionally reliable in community orchard settings.

Best Uses:

  • Fresh eating: Excellent for eating right off the tree - juicy, crisp, and flavorful

  • Cider: Highly valued cider apple with good sugar and acid balance

  • Storage: Stores well for 2-4 months but best enjoyed within first 6 weeks

  • Cooking: Good for sauce and baking

How to Share This Fruit: Liberty is perfect for casual orchard picnics and harvest parties in early October. The fruit is immediately delicious off the tree, making it ideal for "pick and eat" community events where families can graze while harvesting. Set up a tasting station with fresh-picked Liberty, some cheese, and crackers. Because it ripens relatively early and doesn't require storage to develop flavor, Liberty is great for introducing children to the orchard experience - instant gratification! Also excellent for cider pressing parties in early October when people want fresh fall activities. Harvest all fruit within a 10-day window as overripe apples will drop and lose quality.
